ONE POT VEGETARIAN PASTA: Easy Pasta Recipe

LRG_DSC05519.jpgThis one pot pasta is one of my GO TO weeknight recipes! It’s super tasty, easy, and takes under 10 minutes to cook!

INGREDIENTS (makes 4-5 servings)

  • 4 cups of uncooked Fusilli or any pasta of choice (I used  gluten free Gogo Quinoa Super Grains Fusilli)
  • 1 onion, finely chopped
  • 3 fresh tomatoes, diced
  • 3 garlics cloves, finely chopped/minced
  • 2 cups of mushrooms, sliced
  • 1 cup of spinach
  • 3-4 basil leaves, chopped
  • 1 tsp of pink sea salt (or more to taste)
  • Pinch of chilli flakes (optional)
  • 4 cups of water
  • 1 tbsp of avocado oil (or olive oil)
  • Shredded parmesan (optional)

DIRECTIONS

  • Assort pasta and vegetables in a pan
  • Season with salt and chili flakes
  • Add oil and water
  • Turn on heat and mix well
  • Bring water to a boil and stir for 8-10 minutes until most of the water is absorbed and forms into a sauce
  • Serve warm and top with some shredded parmesan or any cheese of choice. Enjoy!
