This one pot pasta is one of my GO TO weeknight recipes! It’s super tasty, easy, and takes under 10 minutes to cook!

INGREDIENTS (makes 4-5 servings)
- 4 cups of uncooked Fusilli or any pasta of choice (I used gluten free Gogo Quinoa Super Grains Fusilli)
- 1 onion, finely chopped
- 3 fresh tomatoes, diced
- 3 garlics cloves, finely chopped/minced
- 2 cups of mushrooms, sliced
- 1 cup of spinach
- 3-4 basil leaves, chopped
- 1 tsp of pink sea salt (or more to taste)
- Pinch of chilli flakes (optional)
- 4 cups of water
- 1 tbsp of avocado oil (or olive oil)
- Shredded parmesan (optional)
DIRECTIONS
- Assort pasta and vegetables in a pan
- Season with salt and chili flakes
- Add oil and water
- Turn on heat and mix well
- Bring water to a boil and stir for 8-10 minutes until most of the water is absorbed and forms into a sauce
- Serve warm and top with some shredded parmesan or any cheese of choice. Enjoy!
