STUFFED BELL PEPPERS: Easy Vegan Recipe

This is one of my favorite vegan recipes! Stuffed bell peppers are super fun and so easy to prepare! You can even switch around the ingredients and use quinoa instead of rice if you want!

Ingredients

 

  • 3 bell peppers, cut in half
  • 2-3 cups cooked rice
  • 1 onion, chopped
  • 1 can of diced tomatoes
  • 1 tsp Himalayan sea salt (or to taste)
  • 1 tsp garlic powder
  • ¼ cup fresh parsley, chopped
  • ½ cup mint (fresh tastes best), chopped

Directions

Cut 3 bell peppers in half and clean well. Oil a baking dish and add cut bell peppers in it. Pour some avocado oil on bell peppers and bake in the oven at 425F for 15 minutes

Prepare rice stuffing while bell peppers are in the oven: Cook onions in oil for 2-3 minutes, until translucent. Add diced tomatoes and season with sea salt, garlic powder and mix well. Bring tomatoes to a boil and simmer on low heat for 5 minutes. Add cooked rice, chopped parsley, mint and mix well

Remove bell peppers from the oven and add rice stuffing in each one. Add 1/2 cup of water in the baking dish and return stuffed bell peppers in the oven for another 16-18 minutes (still cooking at 425F) until the sides become golden brown.
