This is my favourite chicken casserole recipe! It’s super delicious, easy and the perfect meal to make in big batches during meal prep Sundays! I used chicken breasts in this recipe, but you can also use boneless chicken thighs if preferred!
Ingredients (serves 5-6)
- 2 big sweet potatoes (or any potatoes of choice), chopped
- 5-6 chicken breast (pounded and sliced) or 8-10 boneless chicken thighs
- 1 onion
- 2 garlic cloves, minced
- 1 tsp Himalayan pink salt (or more to taste)
- 1 tsp black pepper
- ½ tbsp ground cumin
- 1 ½ tbsp tomato paste
- ½ cup fresh coriander, chopped
- 2 cups water or chicken broth
Directions
- Chop sweet potatoes and place in a baking dish.
- Pour oil on potatoes, mix well and set aside
- Cook garlic and onion with oil in a pan until onions become translucent (about 3-5 minutes)
- Add chicken and season with salt, pepper and cumin.
- Cook chicken on medium heat for 2 minutes on each side
- Add tomato paste, fresh coriander, and water (or broth). Mix well and bring to a boil.
- Transfer chicken to baking dish
- Bake in the oven at 420F for 35/40 minutes, until chicken is cooked and potatoes are tender.
*NOTE: This is a big serving (about 5-6), since this is a great dish for meal prepping, I always cook a big batch to last a few days.
