CORIANDER CHICKEN CASSEROLE: Easy Chicken Recipe

This is my favourite chicken casserole recipe! It’s super delicious, easy and the perfect meal to make in big batches during meal prep Sundays! I used chicken breasts in this recipe, but you can also use boneless chicken thighs if preferred!

Ingredients (serves 5-6)

  • 2 big sweet potatoes (or any potatoes of choice), chopped
  • 5-6 chicken breast (pounded and sliced) or 8-10 boneless chicken thighs
  • 1 onion
  • 2 garlic cloves, minced
  • 1 tsp Himalayan pink salt (or more to taste)
  • 1 tsp black pepper
  • ½ tbsp ground cumin
  • 1 ½ tbsp tomato paste
  • ½ cup fresh coriander, chopped
  • 2 cups water or chicken broth

Directions

  • Chop sweet potatoes and place in a baking dish.
  • Pour oil on potatoes, mix well and set aside
  • Cook garlic and onion with oil in a pan until onions become translucent (about 3-5 minutes)
  • Add chicken and season with salt, pepper and cumin.
  • Cook chicken on medium heat for 2 minutes on each side
  • Add tomato paste, fresh coriander, and water (or broth). Mix well and bring to a boil.
  • Transfer chicken to baking dish
  • Bake in the oven at 420F for 35/40 minutes, until chicken is cooked and potatoes are tender.

*NOTE: This is a big serving (about 5-6), since this is a great dish for meal prepping, I always cook a big batch to last a few days.
